Turmeric Lentil & Veggie Stew

🥄 Ingredients

• 1 tbsp olive or avocado oil
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 1-inch fresh ginger, grated
• 1 tsp ground turmeric
• 1 tsp ground cumin
• ½ tsp ground coriander
• ½ tsp smoked paprika (optional)
• 1 cup red lentils (rinsed)
• 1 medium carrot, chopped
• 1 zucchini, chopped
• 1 cup cauliflower florets
• 4 cups vegetable broth or water
• 1 cup unsweetened light coconut milk
• 1½ cups chopped kale or spinach
• Juice of ½ lemon
• Sea salt & black pepper to taste
• Fresh cilantro for garnish (optional)

👩‍🍳 Instructions

1. Heat oil in a pot over medium. Add onion and sauté for 3–5 minutes.
2. Stir in garlic and ginger; cook 1–2 minutes until fragrant.
3. Add turmeric, cumin, coriander, paprika. Stir and toast 30 seconds.
4. Mix in lentils, carrots, zucchini, and cauliflower. Add broth + coconut milk.
5. Bring to boil, reduce heat, and simmer 20–25 minutes until soft.
6. Add greens + lemon juice. Stir 2–3 mins until wilted.
7. Season with salt + pepper. Garnish with cilantro if desired.
